Frosted Watermelon Rosemary Frosé

I love my cocktails icy cold, so it only makes sense that the Frosted Watermelon Rosemary Frosé should become a favorite of mine!

This recipe takes a bit of planning since you have to freeze the rosé and make the popsicles ahead of time, but once that’s done, it comes together in a hot minute!

Take your favorite bottle of rosé and pour it into icecube trays (2 should do it).  Freeze the rosé overnight.  

Meanwhile, make the popsicles by blending watermelon chunks, lemon juice, rosemary leaves and sugar in a blender.  Strain that mixture so you don’t get bits of rosemary in your drink.  Pour some of the mix into popsicle molds and freeze along with the rosé.

The next day, put your frozen rosé cubes in the blender along with the leftover drink mixture, give it a whirl, adding more drink mix to get it nice and slushy.

Rim the cups with sugar, pour some frosé in, garnish with a posicle and mint and say “Hello, Summer”!

Frosted Watermelon Rosemary Frosé

Makes: 6 drinks

Prep Time: 15 minutes

Chill Time: 12  hours

Total Time: 12  hours & 15 minutes

Ingredients

  • 1 bottle (750 ml) Rosé
  • 2-3 cups cubed watermelon
  • 2 tbsp lemon juice
  • 1-2 tbsp fresh rosemary leaves
  • 1-4 tbsp honey or sugar (optional)
  • Sugar, for the rim
  • Mint, for serving (optional)

Instructions

The night before, pour the rosé between 2-3 ice cube trays and freeze overnight. If making the popsicles, use the measurements below, and make the drink mix the night before so that you can use it for the popsicles and freeze along with the rosé cubes. The additional drink mix should be refrigerated overnight.

To make the drink mix, in a blender, blend the watermelon, lemon juice, rosemary, and sugar or honey (if using) until mostly smooth. Strain through a fine-mesh sieve into a pitcher. Chill until ready to serve.

Spread a little sugar onto a shallow plate. dip each glass in a bit of water at the rim and then in sugar.

In a blender, combine the frozen rosé cubes and about 1 cup watermelon rosemary juice and blend until slushy. Add additional rosé or watermelon juice to thin. Pour into your prepared glasses. Add popsicles and mint (if desired). Drink!

Watermelon Rosemary Popsicles:

If making popsicles and cocktails, use 6 cups watermelon, 1/4 cup lemon juice, 2 tbs rosemary, 3-6 tbs honey or sugar (if using). In a blender, blend the watermelon, lemon juice, rosemary, and sugar (if using) until mostly smooth. Strain through a fine-mesh sieve into a pitcher. Pour the mixture among 6 popsicle molds or Dixie Cups. Reserve 1 cup of the watermelon juice. Freeze 2 hours or overnight, chill the reserved watermelon juice to use for blending.
